How our chickens are raised
Raised in an olive grove, not a chicken house. Open-sided mobile shelters are moved to fresh ground every day, inside solar-powered netting that keeps predators out. The birds eat certified non-GMO feed from Farmer Eddie, plus the seeds, leaves and insects they forage. Raised without antibiotics.
Storage & defrosting
Frozen on the day of slaughter and kept frozen until delivery, with no brine injection. Keeps for up to 12 months in the freezer at -18 °C.
Defrost in the fridge, in its packaging on a tray: allow about 24 hours for a whole bird. For a faster thaw, submerge the sealed pack in cold water, changing the water every
30 minutes (2–3 hours).
Cook within 1–2 days of thawing and don't refreeze raw chicken that was thawed on the counter or in water.
